Chia seed pudding

Although they don’t have much flavour, chia seeds take on a jelly – like consistency when soaked in liquid, making them a great ingredient for puddings.

Ingredients:

  • 2 tbsp chia seeds
  • 125ml whole cows milk, or substitute for any nut milk, soya milk or  rice milk
  • 2 tsp maple syrup, plus a drizzle to serve
  • fruit, such as berries, banana, kiwis or mango, to serve

Method:

  • STEP 1

Combine the chia seeds, milk and 2 tsp maple syrup in a jar or bowl. Cover and chill overnight or for at least 8 hrs.

  • STEP 2

When ready to serve, top with fruit and a drizzle of maple syrup.
